1 Cup Super Oats
2 tsp. Matcha Green Tea Powder
1 tsp. Vanilla Extract
Coconut Oil (for the pan)
1/5 Cup Walnuts
1/4 Cup Blueberries
Drizzle of Tahini
Sprig of Fresh Mint
In a small bowl, combine 1 cup Super Oats with 2 eggs, vanilla and matcha powder. Stir until thoroughly mixed into a smooth batter.
Heat a lightly greased frying pan over medium heat.
Pour in batter to fit the desired size and number of Super Oats pancakes.
Cook until lightly brown on both sides.
Serve hot with optional toppings, or those of your own choosing!
