Description

Pack in an antioxidant punch with these awesome Matcha Super Oats Pancakes! Matcha is known and loved for its potent antioxidants, called catechins. One of these, EGCg, is widely recognized for its cancer-fighting qualities! Super Oats, eggs and matcha come together to make a nourishing and filling protein base, which is enhanced by nutrient-powerhouse toppings like blueberries, tahini and walnuts! SO many healthy and yummy things!!

Ingredients

1 Cup Super Oats

2 Eggs

2 tsp. Matcha Green Tea Powder

1 tsp. Vanilla Extract

Coconut Oil (for the pan)

Optional Toppings:

1/5 Cup Walnuts

1/4 Cup Blueberries

Drizzle of Tahini

Agave Nectar

Sprig of Fresh Mint

Directions

In a small bowl, combine 1 cup Super Oats with 2 eggs, vanilla and matcha powder. Stir until thoroughly mixed into a smooth batter.

Heat a lightly greased frying pan over medium heat.

Pour in batter to fit the desired size and number of Super Oats pancakes.

Cook until lightly brown on both sides.

Serve hot with optional toppings, or those of your own choosing!
