Get FESTIVE with our delicious Dairy-Free Leprechaun Bark bars! Top with fruit and perfectly toasted Oat Clusters for a yummy touch of crunch!! They’re easy to make and easy to Love! Happy St. Patty’s Day!!
1/2 C. blueberries
3 C. baby spinach or kale
3 C. Silk dairy-free yogurt, plain or vanilla (1 cup of yogurt per fruit)(Any Greek yogurt would also work!)
½ cup blueberries
1 mango, cubed
1.) Using a food processor or blender, (spinach), with yogurt until smooth.
2.) Pour mixture onto large baking sheet lined with parchment paper or a tray with cooking spray.
3.) Top with 1 cup of fruit (we used blueberries) and Love Grown Oat Clusters of your choice. Press lightly into the fruit mixture.
4.) Freeze for 2 hours.
5.) Cut into 12 bars or break into pieces. Store in freezer. Serve chilled!
Add more fruit to the mix!
1.) Microwave each fruit for 90 seconds and mash slightly with fork to smooth. (For Rainbow recipe, keep fruits separate.)
2.) Using a food processor or blender, blend the fruits and spinach with yogurt until smooth. Proceed to step 2 above!
