Super Oats Zucchini Bars
Description
Vegetables in protein bars?! YES, please!! These Super Oats Zucchini Bars are packed with protein and fiber. And don’t forget the chocolate chips!
Ingredients
- 1 1/2 cup Super Oats Nuts & Seeds
- 1/2 tsp baking powder
- 1/3 cup brown sugar
- 1 large egg
- 1 large banana (the more ripe and mushy, the better!!)
- 1/2 cup unsweetened apple sauce
- 1/4 cup of Silk Unsweetened Almond Milk
- 3 tablespoons melted coconut oil
- 3 small zucchini or 1 large zucchini
- 1/4 cup chocolate chips
Directions
- Preheat oven to 350 degrees F
- Grease pan (we used a 9 x 9 baking pan and greased with coconut oil!)
- Combine Super Oats, baking powder and brown sugar in a large bowl
- In a separate bowl, combine wet ingredients–egg, banana, applesauce, almond milk and coconut oil
- Add wet ingredients to dry ingredients and stir
- Grate zucchini and squeeze out water by pressing between paper towels
- Stir zucchini and chocolate chips into batter
- Add batter to greased pan and place in oven for 25-30 minutes or until top is golden brown
- Remove from oven and let cool for about 20 minutes before cutting into bars
Yields about 12-16 bars depending on size of bars
