Super Oats Zucchini Bars

Vegetables in protein bars?! YES, please!! These Super Oats Zucchini Bars are packed with protein and fiber. And don’t forget the chocolate chips!


  • 1 1/2 cup Super Oats Nuts & Seeds
  • 1/2 tsp baking powder
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 large banana (the more ripe and mushy, the better!!)
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup of Silk Unsweetened Almond Milk
  • 3 tablespoons melted coconut oil
  • 3 small zucchini or 1 large zucchini
  • 1/4 cup chocolate chips


  1. Preheat oven to 350 degrees F
  2. Grease pan (we used a 9 x 9 baking pan and greased with coconut oil!)
  3. Combine Super Oats, baking powder and brown sugar in a large bowl
  4. In a separate bowl, combine wet ingredients–egg, banana, applesauce, almond milk and coconut oil
  5. Add wet ingredients to dry ingredients and stir
  6. Grate zucchini and squeeze out water by pressing between paper towels
  7. Stir zucchini and chocolate chips into batter
  8. Add batter to greased pan and place in oven for 25-30 minutes or until top is golden brown
  9. Remove from oven and let cool for about 20 minutes before cutting into bars

Yields about 12-16 bars depending on size of bars
